1 package spaghetti or linguine
1 pound uncooked medium shrimp, peeled, deveined
1 1/2 cups drained canned artichoke hearts, chopped
1 1/2 cups crumbled feta cheese
1/2 cup chopped tomatoes
1/4 cup olive oil
3 cloves of garlic
3 tablespoons fresh lemon juice
fresh parsley, oregano
Heat the oil in a large
pan over medium heat. Add chopped garlic and sauté for 30 seconds. Then add the
shrimp and sauté until almost cooked through (about 2-3 minutes.) At this
stage, add chopped artichokes, feta cheese, chopped tomatoes, lemon juice,
parsley and oregano. Sauté all the ingredients until shrimps are cooked through
(about 5 minutes.) Season with salt and pepper.
Meanwhile, cook the pasta according
to package instructions stirring occasionally. Drain. Transfer the pasta to a large
bowl. Add the shrimp sauce and toss to coat.
Enjoy!
